Functional foods: artisan Naked Barley bread

Popty Cae Groes talks to WISE Network

Popty Cae Groes’ Naked Barley bread (reserve champion in True Taste of Wales 2008) on sale in shops, including Co-op and Aldi.
The food industry is gaining interest in using barley because it can lower the risk of type II diabetes and heart disease. Naked (hull-less) barley is the best whole grain barley because it can be milled like wheat and used in a wide range of products.
Bangor University researchers have bred new varieties of barley and tested them with nutrition experts at Imperial College London. They have lower glycaemic index (GI) values than oats and are ideal for use in developing novel whole grain food products.
